WIAW-Super Foods

Thanks to Jenn, there is a fun link-up party where people share ideas of foods to eat/make by posting what they ate. So I am linking up today, and there is a recipe from my sister included! It’s What I Ate Wednesday (well, it’s posted Wednesday, but it’s what I ate on Tuesday). ;)

As I was eating my lunch I realized I had already consumed a few ‘super foods,’ I felt real healthy. ;) I by no means only ate what was pictured, but I thought the theme was fun!

Super foods are simply foods nutritionists and other food experts have tagged as being really healthy and good for us-chock full of antioxidants, and vitamins & minerals that help us be and feel SUPER! (there are a few lists of them out there, so my ‘super foods’ might be on one list or another)

Breakfast

On Tuesdays my breakfast is like 4 mini-meals long!

  • I ate Go Lean Crunch with milk before teaching early a.m. BodyPump.
  • And then I drank my protein drink (chocolate whey protein powder with milk) immediately after teaching.
  • Once home (after feeding baby Lily) I ate a delicious, new-to-me Greek yogurt (more about them coming in a post soon!).
  • After I took a shower and a short nap, I ate again (it was only 9:15 a.m. by then). I had eggs, spinach, and feta.

Because this all happens so freaking early, there are not many pictures. hah!

Lunch

This was actually a picture from my dinner Sunday, but I ate part of this plate for leftovers yesterday for lunch. Salmon, spinach, and quinoa!

Yummy salmon sauce recipe (from my sister):

  1. Thaw salmon, put it on foil on a cookie sheet
  2. Season it with lemon pepper, butter, lemon slices on top.

Sauce:

  • 1 c brown sugar
  • 1/2 c butter
  • Juice of 2 lemons
  • Red pepper flakes
  • Dill weed

Melt butter, add everything, don’t cool it too long or then it will get hard

Cook it: uncovered; baby sit it because over cooking makes it yucky.  400 degrees for 20-ish minutes. Check at 18 minutes, but if it was thawed it should take about 20 minutes.

{I halved the sauce recipe for two large pieces of fish. I also only did 1/4th of the butter in the recipe for ours on Sunday because we were running out, and it turned out fine.}

Snack

Holy yummy–with a side of a yummy baby! hehe.

This Trader Joe’s based snack (Speculoos Crunchy Cookie Butter) is awesome! Another un-pictured forkful of it went into my mouth too. Mmmmm!

Dinner

fried quinoa <–-used this recipe but did my own thang + chicken cooked in a crockpot (with soy sauce, brown sugar, & orange nunaturals stevia), with a side salad topped with ginger sesame dressing & almonds, and oranges.

I will eat something sweet this evening, I am sure! (typed this up after dinner Tuesday)

  3. Yum that fried quinoa looks really tasty! I had some similar superfoods yesterday – Greek yog, apple, almonds, chicken. I can’t believe I’ve still never tried cookie butter. By the time I get all my usuals from Trader Joe’s the bills already up to my limit so I always forget! I think my fave snack from there is the three layer hummus.

  5. mm, cookie butter. Definitely going to have to pick some up next time I get the chance to hit up a Trader Joe’s! I’ve only ever had the smooth one, but I prefer crunchy to smooth PB, so I imagine the same would go for cookie butter ;-)

  6. Now that I think about it, I was on the super foods train yesterday too! Let’s see, I had oats, blueberries, chia seed, almonds, Greek yogurt, kale, dried cranberries, and beans! Woot!

    I LOVE TJ’s Cookie Butter, but I’ve never had the crunchy version. I have a feeling I’d love it even more than the original. We need to do a TJ’s date soon! ;)

  10. that salmon sauce recipe sounds so easy and i bet the brown sugar and the chile flakes give it such an interesting flavor! i adore putting nut butter on apples so i bet that cookie butter is amazing.
