Caprese Salad

Thanks for your kind comments, and for making me feel like it was okay to share such a special few lots of hours of birth with you. I definitely debated whether to share or not, but finally decided I wanted you all to be a part of it too. And figured that if anyone had a problem with it, they would stop reading. ;) So thank YOU from the bottom of my heart.

Funny story:

Lily got dressed in an adorable outfit.

And 3 minutes after taking this photo, she projectile vomited alllllll over that jacket & myself.

Fun times!

I actually couldn’t stop laughing while it happened….simply because she looked OH so innocent as it all just gushed out of her mouth. Gosh she makes me smile–no matter what she’s doing!

Actually, that is a lie. I am not super smiley at 3 a.m. when she wants to just keeeeeeeep on eating. :/

I couldn’t talk about non-Lily items until I shared something about Lily first. Get used to it. ;)

But now, let’s chat food.

Specifically deeeeelicious food.

My mom, while she was here, bought me a basil plant. (I know, right?!) She also bought a huge chunk of mozzarella & a bunch of tomatoes. She made me a caprese salad one of the days she was here, and it TOTALLY hit the spot.

I was mmmmming my way through the entire bowl.

So I’ve pretty much eaten it every day since.

I am sure you were wondering what I’ve been eating, so there ya have it! ;)

Caprese Salad

Ingredients

  • 2 large roma tomatoes
  • 3 large, fresh basil leaves
  • 1.5 oz fresh mozzarella
  • 1 Tb balsamic vinegar
  • 2 tsp olive oil
  • salt & pepper to taste

Directions

  1. Dice the tomatoes. Place in a large bowl.
  2. Chop the mozzarella into small squares. Dump into the same bowl.
  3. Snip the basil leaves into pieces, right over the bowl.
  4. Add the vinegar, oil, and salt & pepper.
  5. Toss to coat.
  6. Enjoy!

Makes one really large serving.

Thankful Thursday

  1. I am grateful for burp cloths. Always have one around a new baby….always.
  2. I am also thankful for washing machines. I never appreciated one so much!
  3. I am real thankful for pumpkin muffins. Mmmmm!

  1. caprese salads are so good!! i love big ole hunks of mozzarella and really good balsamic! speaking of, there’s this olive oil store in st louis (new to me!) and they have THE BEST balsamic… i’ll pick you up some… seriously, itz amazing!! and i love lily updates! always and always!

    • Dude, I think my mom goes there allll the time?! If it’s the one I am thinking of-they do have THE best balsamics & olive oils. My fave is the blackberry balsamic and the garlic olive oil. Mmmmmm! Try ‘em if you haven’t!

    My favorite kind of caprese salad is with super fresh mozz, thick and syrupy balsamic, and a nice fancy olive oil. Caprese sandwiches are one of my favorite summer foods!

  4. My favorite salad!! I love fresh, thick cut slices of mozz and tomatoes, drizzled with some olive oil and balsamic vinaigrette, fresh basil, salt and pepper. Perfection!

  6. hehehhe- if you decide to take family pictures (for Christmas cards or what not) – the key is to change them literally right before the photograph. Kay used to poop through outfits like nobody’s business ;) One of my favorite salads! YUM!

  10. Haha sometimes all you can do is laugh! I remember when Hunter was teeny tiny and had his first poop explosion…all over me! At first, I kind of freaked, but then I just had to laugh! I couldn’t do anything except let him finish and THEN clean everything up. Oy. Burp cloths are totally a must! They are something that I actually totally overlooked when I was pregnant and didn’t realize how necessary they are until after Hunter came. :)

    • To add to Ashley’s story … when Addie was a newborn, I had one incident when I was about to nurse her. So I was in the living room, topless, when she pooped and needed a diaper change. So as I’m leaning over her (still topless!) to change her diaper, she decides to poop and pee again in the middle of the diaper change … so it goes all over me, her, and the hardwood floors. THEN my boobs decided to leak at the same time. It was QUITE the scene! ;) We are a bunch of hot messes, huh?!

  12. Babies just don’t appreciate good fashion ;) The funniest thing about our lil guy is how loud and violent sounding his farts are. I seriously never knew that babies could sound like little old men. We’re also dealing with a lot of freestyle peeing (gotta love boys!).
