An Excuse to Eat Chocolate…

Hey friends!

How are you all doing mid-week?

Yesterday was pretty heinous for moi, actually.

All morning I was nauseous, and extremely exhausted. I was so so unmotivated to do anything….it was a pretty bad combo.

I did have a green smoothie (which helped me perk up a bit) in the later morning.

And then at ‘lunch time,’ (I say that kinda jokingly b/c I pretty much eat all day long now) I had this:

That would be kraft mac & cheese & popcorn.

Awesome, right?

Whatever works. And that totally did the trick– goodbye nausea!

I was still tired pretty much all day (baby girl is sucking the energy righhhhhhhht out of me lately) though, and she hung out in my ribs for most of the day too (darn!), so overall the day was not so amazing.

It had amazing parts, yes, but a lot of it was not.

Just keepin’ it real ya all. Everyday there ARE amazing blessings & amazing things, and I TRY to focus on those, but yesterday was a tough one.

Cheers to a new day!

An Excuse to Eat Chocolate

Speaking of food… I must admit I’ve been eating the same thing over & over again pretty much every day. At least once per day if not more.

Thanks to Erica (follow her on IG for awesome recipes, cute photos of her & her fam, and more!), I baked up her amazing recipe & have been devouring it ever since.

But if we’re gonna really keep it real, I mainly eat the bars so I can smear it with TJ’s cocoa almond butter.

Almond Butter Bars (via Itzy’s Kitchen // used with permission)

  • 1.5 overripe bananas
  • 1/2 cup brown sugar
  • 1/2 cup + 2 tablespoons almond butter
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups oats
  • 1/2 cup all purpose flour
  • 1 teaspoon baking soda

Pre-heat the oven to 325 degrees F.

Mash up the bananas and then mix in brown sugar, almond butter, egg, and vanilla. Once well combined, mix in oats, flour, and baking soda. Line a 9 x 13 pan with parchment paper. Spread batter. Bake for 25-30 minutes.

{My CHANGES to the recipe: I added more bananas, 1/2 scoop of vanilla whey protein powder, and 2 tsp cinnamon to mine}

p.s. here is what the jar of cocoa almond butter looks like:

an excuse to eat chocolate

{this was a muffin Ashley gave to me! And yes, of course I topped it with chocolate}

Pretty much baked goods (even if they’re ‘healthy’) mean = eating it with chocolate.

And the cool thing about these bars with chocolate is that it’s a totally acceptable any time of day food–because it has almonds in it.  😉

Alright, you all have a GREAT day! <3

When YOU bake goods–do you include chocolate or not??! What is YOUR favorite chocolate spread??! (I need more ideas! hah) What is the latest recipe YOU tried from another blogger??! Was it good??!

  2. It’s not a baked good without chocolate if you ask me! 😉 For real though, all of this chocolate and nutella talk is making me even MORE excited to get to Chicago so I can finally start baking again!!

  3. I’m all for adding chocolate to baked goods 😉 I can’t even imagine making banana or zucchini bread without chocolate chips. Although if I want chocolate in spread form, I usually go for PB & Co Dark Chocolate Dreams!

    • you can’t taste the bananas–which is why they’re good. 😉 I love banana bread too, yo. You can’t taste the bananas–so it’s just a way to sweeten the bread/baked good.

pb still makes me gag, yo. sorry.

  9. Whatever works to keep the nausea at bay. :) Love Erica’s recipes! These bars are definitely a winner. I like mine baked with a handful of chocolate chips in the batter.

My fave evening snack lately is popcorn sprinkled with chocolate chips and sliced honey roasted almonds (from TJ’s). All the toppings fall to the bottom of the bowl, but still tasty!
