We went to a birthday party for a friend’s little boy the other night….HILARIOUS when he ate his cupcakes.

Cooking Without a Recipe

Soooooo if you’ve hung around here for a bit you’ve probably realized I don’t post a lot of recipes. There are several reasons for this:

  • I’m lazy
  • I don’t love to cook (I know, gasp!)
  • I don’t really meal plan
  • I don’t ever truly follow recipes

So do me & Jared even eat meals?!

Hah. Yes, yes we do. And we eat every dinner together except for Wednesdays when neither of us are home at a dinner hour.

Other than those first 16 weeks of my pregnancy, I’ve cooked at least 2x/week for us during our marriage.

I do it because I want to eat a good meal, and because I love Jared. But honestly? I’d be fine with homemade pizza, homemade paninis, or chopped salads every night. With a few nights out per month at Cafe Rio.

But alas, I also know deep down that I need to cook a variety of foods for Jared & I because it is kind of fun to have a new meal. And as much as he loves me & says he could eat refried beans every day…..

I just couldn’t do that to him longterm, ya know?

I also only cook meals that take less than 30 minutes (I can do prep ahead of time though), and I do not cook meals that have crazy ingredients that I’d never buy or use again.

The other day when I was trying to decide what to make (at the grocery store…..), I thought of the main part (which I had in my pantry), and grabbed 1 item I needed at the grocery store, and then whipped it together later that night.

I posted a picture of it on instagram and someone asked if I had the recipe….

uhhhhhhh…..

No, I don’t. But because I am nice, I will give you the ingredients list & the (really vague) directions of how to make it.

So where does this ‘type’ of cooking without a recipe come from?!?

My mom.

You guys, I realized this the other night! My mom is an amazing cook (such good food!) but she never follows a recipe. Ever. She has the base idea in her head, and then she throws in whatever she might have on hand…and wahhlah! Dinner!

She uses fresh herbs, lots of fresh veggies, & a dash of unhealthy stuff (butter, cream, sour cream, etc)-so her food always tastes decadent but healthy. She is a master at it, and people love her meals.

I had an ahah moment when I realized that is how I do it too!

See? I’m already becoming more like my mom! (Which, by the way, I’d take as a compliment any day since she’s an amazing lady).

And without further ado, here is the meal that is crazy good but doesn’t necessarily have the most clear directions… πŸ˜‰

Thai Coconut Chicken Curry

Ingredients

  • 1 can curry paste (I think it’s 4 oz?)
  • 1 can coconut milk
  • 2 red bell peppers
  • 2/3 cup milk (or almond milk)
  • 3 breasts chicken -cooked & shredded
  • 1 bag frozen broccoli
  • salt to taste
  • shredded coconut for garnish; sour cream or Chobani for garnish

Directions

  • cook chicken breasts in crock pot (it took meΒ the crock potΒ 4 hours)
  • shred or dice chicken
  • in a medium saucepan over medium heat add the chicken, curry paste, & milk
  • slice the bell peppers & throw those & broccoli into the pan
  • let everything simmer for 5 minutes
  • add the can of coconut milk
  • simmer for 5-7 minutes
  • add salt to taste
  • plate & top with shredded coconut and/or yogurt

The curry paste I used is legit and it is HOT. My mom buys it for me at an international store in StL–so I load up whenever I see her. She’s the best!

This recipe is also really good with sweet potatoes, cashews, carrots and or whatever other veggies you want to chuck in there.

I love this meal because it is tasty, easy, and I often have most of this on hand. WIN!

  1. this is totally my type of cooking! if i THINK the recipe idea has potential, i’ll write it down, but i’m a huge fan of throwing things together! and we love thai food but i rarely make it at home! i’ll have to try your recipe – i mean concoction! :)

  2. I do a little recipe following, a little creative cooking! I like both. Some days, its just easier to follow a recipe. When I have time though, I like to kind of stare at whats in the cabinet/fridge and then get to work!

  3. My mom cooks about the same way…Some things she actually will follow a recipe, but for most things, she just throws them together and it’s ALWAYS wonderful :)

  4. My grandmother is the same way. She never sticks to a recipe and everything she makes is tastylicious. I am working on it but I get stuck with soups and chowders. How that woman makes a perfect base every time is beyond me.

  6. I love to cook, try out new recipes, invent my own…you name it. However, since having Hunter and having a lot less time on my hands, I spend less time in the kitchen and appreciate simple meals more than ever.

    This Thai recipe looks great! We love Thai over here. It seemed intimidating to make it homemade at first, but it really is quite simple! You just need the base ingredients – curry and coconut milk, and then you can get creative and add whatever!

  8. I loove coconut curry anything- yum!
    I am really, really bad about following recipes. I guess I’m a rebel- I hate to measure things and just like to keep adding until it tastes “right.” Luckily, that works out well with cooking. Baking on the other hand? Not so much.

    ohhhh my goodness, i luv lluv LURRRRRVVVVVVV me some thai anything, and coconut anything!!! i happen to always have coconut products and curry on hand, so this recipe/idea is PERFECT for me :) i like making stuff like this, the leftovers are good and i can dip other foods in the sauce.. mmmm sauce. lately i’ve been a snacking queen, and having meals of little snacks. last night i had homemade pesto with carrot sticks, nuts, more carrot sticks, crunchy peanut butter with honey, yogurt and jam, some coconut/chocolate/almond/honey concoction, and salad. yeah…. i’m not preggers either! heehee. i’m just going with my recent weird food cravings.. i was eating tons of meat about 2 months ago, and then suddenly all i want are nuts and salad, and sweets. so whatever, it’s all good!
    if i cook, then i’ll cook something easy as well… i used to make fancy gourmet stuff that took hours and hours, but now i’m all about easy and fast and yummy! and healthy too, of course πŸ˜‰

  11. Yum, this looks delicious! I’m not so great about posting recipes either. If it’s not just perfect, I refuse to remake and perfect it. Plus, I generally just throw stuff together without measuring, which leads to pretty awful and vague recipes. haha

  12. First of all, that little boy is adorable!! I usually tend to start of with a recipe, but make tweaks and changes along the way. My husband finds it so intriguing because his mom doesn’t cook AT ALL. He is always so interested when I change something , add something, etc. I totally do my own thing in the kitchen though.

  13. I can’t cook, but I love to bake!! Most of my recipes involve a cookie/bar/smoothie etc. But I try to make them healthier! :)
    I am definitely not a meal planner!

  14. Looks great! I love to cook, but I find that some of my favourite recipes come from playing around in the kitchen and just throwing stuff together. That’s how most of my recipes come out! And I’ve decided that I need more curry in my life, it is fantastic.
