Mexican Loaded Sweet Potato

Your entries in the popchips giveaway made me want to try all different kinds of chips! Thanks a lot. 😉

But that’s okay, I love me some chips.

Speaking of, the other day at Jared’s parents’ house, I loaded my chicken burger plate with ’em.

You know what else is delicious? This meal that I made the other night…..

Mexican Loaded Sweet Potato

I got the idea off of a Biggest Loser episode, but sort of did my own thing.

  • 1 can black beans
  • 3 Tb TJ’s salsa verde
  • salsa (for topping)
  • sweet potato (2)
  • cilantro (1/4 of a bunch)
  • sour cream/Greek yogurt (for topping)
  • laughing cow cheese wedge + cheddar
  • tomatoes


  • Bake sweet potatoes ahead of time in the oven. 55 minutes 350 degrees
  • Cook black beans over the stove. Medium heat.
  • Add in the TJ’s salsa verde.
  • Add in the cilantro & some tomatoes to the beans & turn off the stove.
  • Cut the sweet potato in half, and top with toppings! (cheese/sour cream/Chobani/salsa/cilantro/tomatoes)

So easy, so delicious!

This was a hit–and it took me like 10 mins to prep, and only 5-6 minutes to clean up. Winning!


Thankful Thursday

  1. I am thankful for Easter and the eternal gift He gave us. I love this time of year–He is risen!
  2. I am so thankful for fabulous sisters who make me laugh, especially via text messages. Bahahhaah
  3. I am really grateful for my foam roller…I am SOOOO sore. still. Don’t take off 10 days & then teach 3 days in a row of fitness classes…..major #fail on my part. I can’t still even walk right…..

And with that, I am off to work!

    That Mexican Sweet Potato has me saying….. “Why didn’t I think of that?!?!” So, easy, yummy, healthy, simple, AND I regularly have all those ingredients in the fridge. I just think that’ll be lunch tomorrow… YUM! Thanks Annette!

      Also, I’m with ya on the foam roller!!!!! I set my intention for every day during evening t.v. time to roll roll roll…. My IT Band cant seem to get enough! It hurts SO good!

  6. I’ve seen various versions of this Mexican Loaded Sweet Potato, but I’ve never tried it myself. For some reason I have a hard time thinking of all the ingredients going well together. I love sweet potatoes and I love Mexican food, so what’s not to love though, right? I should just bite the bullet and try it!

    My friend and I are driving to the Hill Country – Kerrville – this evening and will doing a 2-day Easter Hill Country ride, wahoo! I got new cycling shorts so I’m really hoping they give me lots of support and comfort cuz something tells my toosh is going to be SORE on Sunday!!!
    So excited for Easter Sunday: church with my awesome family, then mom is making lamb chops, my favorite! with some kind of scrumptious mint sauce… drooling right now. lol
    and with that, I’m thankful for my bike, my friends, and of course my family!!!!

  11. Ooooh yum that looks really good! I love sweet potatoes, therefore this should be right up my alley 😉 I’m thankful for the predicted 70 degree weather on Easter! My boyfriend and I are trying to get in a hike before Easter dinner after church! :)
