Dark Chocolate Almond Butter No-Bake Cookies

Happy weekend to all of us, eh?!

Glad you all think it’s awesome that I sorta drool when I sleep really deep. I’m glad we’re a bit closer now. 😉

Yesterday started out awesome & ended awesome. In the middle was not so awesome & I was totally stressed all day at work. Ahh well.

Here were some awesome parts…

And, I went to Trader Joe’s (!!!!) –the new one in SLC. It was amazing.

I could’ve stayed all day long, but I tried to limit myself to just a few things……

I sort of bought half the store anyways.

And now….

Ummmm yes. Have I got a recipe for you!

We served these cookies to Ashley & Cody this past weekend & to Jared’s family, and they were a hit!

They are definitely rich, so I only eat 2 at a time instead of 4.

Dark Chocolate Almond Butter No-Bake Cookies



  • 2 cups sugar
  • 1/4 cup dark chocolate cocoa powder (I used Hershey’s)
  • 1/2 cup milk
  • 1/2 cup butter
  • 1/4 tsp salt
  • 1/2 cup almond butter
  • 3 1/4 cups old-fashioned oats
  • 1 tsp vanilla


  • Combine sugar, cocoa,milk,butter, and salt in a pan over medium heat.
  • Bring to a boil. Boil for ONE minute, then remove from heat.
  • Add in almond butter, oats, and vanilla.
  • Use a spoon to drop cookies by desired size onto a cookie sheet or waxed paper to set.

{note: they sort of look like poo, and that’s how they should look. but looks can be deceiving.}

Easiest cookie recipe ever–and they’re ummm, sort of healthy? 😉

I think the oats & dark chocolate cancel out the butter & sugar…..

But let’s be honest, life would be boring without really rich, chocolatey cookies.

    I’ve only been to TJ’s once, but I bought cookie butter, dark chocolate PB cups, three-layered hummus, greek yogurt, and a salted caramel dark chocolate bar. I think it’s pretty safe to say that I like dark chocolate!

  3. I can confirm that these things were SO GOOD! The extras you sent home with us were gone within a day. 😉 I really liked them with the dark chocolate cocoa powder too. Now I just need to find that stuff!

  6. I really like the Trader Joe’s here! There is a dip there that has spinach and kale so I always get that, the Greek yogurts are good too. Also, there are vegetable masala burgers that are also delicious, lots of good stuff there and pretty reasonable prices for healthy foods.

    I may have to try those cookies, they look really delicious and of course I love dark chocolate :).

  8. Yum! I love dark chocolate. We usually get some arugula, wine, tortilla chips, gf bagels, and pie (off the top of my head) at TJs! I pinned your cookies :)

  11. Hooray for a new Trader Joe’s opening! The closest one to me is 30-40 minutes away, but I make the drive often! (The closest Whole Foods is even further!)
    The cookies look DELICIOUS. Like delicious poo! :)
