Protein Apple Chunk Muffins

Hey friends!

The beautiful Fall weather has arrived! And I am okay with that.


I really do enjoy the chilly mornings-but it takes longer to get dressed now! Hah. You must add a sweater + jacket + slippers (I work from home) instead of just the usual shorts/skirt & shirt. My minutes matter a lot, so this is kinda a big deal. 😉


Extra clothing aside, I think it’s so fun to look forward to the upcoming holidays, family time, and the meaning behind some of those holidays. It’s never too ‘early’ to think about gratitude, and in my case, the Savior. In fact, I kinda wish that ‘holiday cheer’ & emphasis on such beauty hung around the whole year….


And with Fall comes baking. I swear once the chill hit I turned & ran for the kitchen. And my pans! And my protein powder! And the cinnamon!

Lots & lots of cinnamon.

Besides, I promised you a recipe from my baking escapades a few days ago.

Protein Apple Chunk Muffins


  • 2 cup whole wheat flour
  • 1.5 cups chopped apples (I used 3 small-ish apples)
  • 1/2 cup brown sugar
  • 4 tsp baking powder
  • 2 heaping scoops FitMixer vanilla protein powder (or comparable. This was 32+ grams protein)
  • 3 Tb cinnamon
  • 1 tsp nutmeg
  • 1 cup milk (I used almond)
  • 1 Tb coconut oil
  • 1 cup applesauce
  • 1 beaten egg


  1. Combine dry ingredients.
  2. Combine liquids & add to dry ingredients.
  3. Stir until moist.
  4. Spoon into muffin liners in the muffin tin.
  5. Bake at 350 for 18 minutes.

I filled 2 muffin tins & had a bit of batter leftover, so I added some butterscotch chips & baked it in a mini-loaf pan.

I can’t implore you enough to go MAKE these!


Oh boy. These are so good! It makes a lot, so I froze a bunch, and will continue to munch on these babies (topped with salted almond butter most of the time).

Healthy, delicious, protein-packed, and convenient? It doesn’t get much better than that, folks.

  9. Even while munching on an apple, these make me want MORE apples! Love the simple ingredient and instruction list; always make me more apt to whip up a batch as soon as I get home! White chocolate chips may be good to thrown into a few for the boyfriend!

    Just made these muffins and they are delicious!! I got 18 big muffins. They did stick slightly to the paper (I sprayed the papers) but nothing I cant deal with! I love to bake so thank you, thank you for sharing this healthy recipe!

    • Yay! Glad you liked ’em. Mine stuck a bit too, so I froze a bunch, and after putting them in the fridge before eating, the papers came away just fine :)

    I just made these with gluten free flour mix and substituted vegetable oil (that’s all i had) and they are delicious. Not too grainy… probably works because baked GF goods always seem to be mushy and have an odd texture. Love it! Thanks so much for this healthy recipe.
