Simple Protein-Packed Pancake

Random note: The other night my cousins from Cali came to stay the night (they’re driving across America to get back to school in NY).

You guys have to see how tall & huge they are.

Remember, I am 5’8.

Ummmm yah. Wow.

The last time I saw them they were like 10 & 12 and short. They grew up!

So the other day I was lying in bed & I wanted a pancake realllllllyyyy bad.

(I think I just wanted nut butter & syrup, to be honest. But that could be weird if I just ate both of them simultaneously. Right????)

Instead of being the ‘smart’ person & checking recipes, I decided to make my own version.

Well, I gotta say. It turned out miiiighty fine.

And it was EASY. Plus, I bet you that you have at least all if not most of these ingredients on hand.

Pinky promise.

Let’s just say, these boast an amazing nutritional profile (see below), taste amazing, and are freaking easy to make–there will be plenty of these protein-packed pancakes in my (and my husband’s) future, I assure you.

Especially because I am lazy in the kitchen all most days.

Simple Protein-Packed Pancake

Ingredients

  • 1 scoop protein powder (I used 100% optimum nutrition whey-chocolate)
  • 1/8 cup almond milk
  • 1 heaping spoonful cottage cheese
  • 1 egg
  • dashes of cinnamon, stevia (NuNaturals Vanilla), salt
  • 2 Tb raw oats
  • grated zucchini (because I had some on hand)

Directions

  • Combine all ingredients in a bowl.
  • Whisk until combined.
  • Pour in a (olive oil-greased) skillet over medium heat. (It will seem thin, but if you let if cook, it thickens to perfect consistency).
  • Flip after about 2-3 minutes.
  • DEVOUR with that almond butter (or almonds) & syrup & Greek yogurt.

Hello perfection.

The best part(s)?

  • This actually TASTES like a pancake. (Unlike these.)
  • It makes one HUGE one.
  • This pancake has 40.9 grams of protein in it (295 calories).

Thankful Thursday

  1. I am super grateful for 10 minute naps. It’s amazing what those bad boys can do for your health & sanity!
  2. I am very thankful for my new pink Nike running shorts. Best impulse buy ever! (Impulse because I tried them on OVER my skirt in the middle of the Nike Outlet store. Awesome.)
  3. I am really thankful I get to see an amazing friend tonight at her bridal shower. :)

And yes – I am know for throwing on random things over clothes. Did it with a dress and belt combo once when the dressing room line was full ! Lol

  3. These look awesome, lady! I am so going to try this tonight after I teach Zumba & see my nutrition client. I love the nutrition stats AND how much protein is in it. The issue I have w/ some “pancakes” (and my boyfriend, too) is that they taste OK, but not like a pancake. I def want to try this because I WANT TO EAT A PROTEIN PANCAKE that tastes like a REAL PANCAKE, haha… ok rant over :) I do love making chobani & oat pancakes – those come out pretty good and filling, but a tiny bit bland. Adding in fruit like I did this past sunday helped tremendously.

    Today I am thankful for me awesome new blog design that I invested a lot of $ in. It was worth it! Happy Thursday!

  5. i really dont make/eat pancakes enough. the last batch I made was last fall and those were whole wheat pumpkin, sooo good!

    Today I am thankful for cooler weather this morning which made for nice running :) and i’m thankful for finally having a vacation coming up next weekend!!

  6. Those look amazing – I get confused when people say, “I didn’t use a recipe, I just threw this together.” If I tried that, my pancake would probably come out looking like tomato soup and or a felafel. I have to follow recipes to a T!!!!

  7. I try to squeeze in protein whenever I can, especially using protein powders. I have like 3 different kinds at home haha, Love it! Awesome pancake, I love how easy pancakes can be, I made one last night, just threw some stuff togehter and it came out perfectly. I was pretty excited haha. I’ll have to try yours too, haven’t tried it with cottage cheese before.

  8. I love protein pancakes – I make one for breakfast at least a few times a week! I was amazed the first time I made one, I had no idea protein powder would cook up so well. I haven’t tried adding cottage cheese before – might have to add that in my usual.

  9. How you can fall asleep, be asleep and wake up in ten minutes is beyond me! Oh and that pancake looks awesome. We don;t usually buy cottage cheese much- is there anything I can sub for it?

  10. I’m ALWAYS on the hunt for new pancake recipes, especially flourless ones! Protein pancakes are becoming one of my newest breakfast staples 😀
