How was yesterday?? I really love reflecting on all those who serve & sacrifice for our country. <3
I know I also, for sure, enjoyed a day off mid week. I could get used to that!
4th Recap
I slept for 11.5 hours (YES!!), did a sweaty workout at home, read, ate lunch outside, chilled with the hubster, and had a nice BBQ party with the in-law family.

Crockpot Turkey Lentil Chili
The other day I made this incredible dinner out of nowhere. And since it’s way took hot too cook, the husband, I am sure, was glad I made anything.
Not gonna lie, I kind of surprised myself too!
This stuff was awesome. New recipe, baby!
Ingredients
- 1 package lean ground turkey
- 1/2 cup salsa
- 1 red onion
- 2 Tb cumin
- 2 Tb cilantro
- 2 Tb garlic
- 1 red bell pepper, sliced
- 1 cup lentils (dry)
- toppings : Greek yogurt, cilantro, lime juice, lettuce, cheese, tomatoes, etc.
Directions
- Combine the first 6 ingredients in a crock pot. Turn it on to cook for 6 hours (on high).
- 1 hour before it’s done, cook the lentils as directed.
- 1/2 hour before dinner, add in the sliced bell pepper. (We don’t like our veggies mushy!)
- Put the cooked lentils in a bowl, top it with the chili, and add toppings.
- Enjoy!

If you like easy, delicious, healthy, Mexican, this is FOR you. By the way, the husband loved it because it is hearty, yet doesn’t taste too healthy, if ya know what I mean.
Thankful Thursday
- I am thankful for good watermelon. After a horrible experience with bad watermelon yesterday, I now will forever appreciate the good ones!!
- I am super thankful for chocolate chips. Sometimes they just fix the ‘chocolate’ craving so easily.
- I am thankful for the power of thinking positively. It was amazing to recognize that blessing through some really hard moments yesterday.
Well, with that, I am off to hit up the gym and then head to work.

I love lentil based chili! What kinda sandwich is that?
This looks SO good!! I just made lentils for the first time a couple months ago (in jambalaya) so I’m all about using them… especially in the crockpot!! Yesterday I made this cookie cheesecake thing that was out of this world!!

Funny you posted about lentils because I was just watching someone of the Food Network that cooked with that. I have never made them but was curious because I hear they are very healthy for you. Saving this recipe for my first lentil tasting!

I always do meat pieces (ie chx breasts) in the crockpot but NEVER have done ground meat .. I cannot wait to try!!
