Butterscotch Protein No-Bake Cookies

In other news I taught a new BodyPUMP class yesterday! It was so fun. I kinda love surprising people (a bunch of ’em had never tried BP) with a super hardcore workout…and then watching their faces change by the end of the class. 😉

I am sort of kidding, but I really do enjoy helping people push their limits and see what they CAN do. It rocks!


K, so a part of my weekend was spent licking a spatula. Want to know why?? (<–I mentioned this recipe was delicious & forthcoming)

Yah, exactly.

{And yet another reason I am doing great!}

These babies are SOOOOOOO good. They are high in protein, rich in healthy fats, complex carbs, and deliciousness. Plus they actually taste decadent (not like ‘pretend cookies’). Doesn’t get any better than that, now does it?!

The ingredients are simple too!

{yes. I am great at staged recipe set-ups….}

Butterscotch Protein No-Bake Cookies


  • 1 1/4 scoop chocolate whey protein powder
  • 1/2 cup raw oats
  • 1 cup raw almonds
  • 1 packet stevia
  • 1 Tb cinnamon
  • 1 tsp vanilla
  • 1 tsp salt
  • 2 Tb butterscotch chips
  • 1.5 Tb almond milk + 1 Tb to taste


  • Dump all ingredients into a food processor.
  • Process for 1-2 minutes.
  • Stop and scrape sides & process again for 1-2 minutes.
  • Repeat (scrape & process) 1 more time (until the batter is smoothed to your desire. I like a bit of chunks!)
  • Using a small spoon, drop rounded batter onto a sprayed (olive oil is what I used) cookie sheet.
  • Freeze for 10 minutes & then store in fridge.


You might eat the whole batch of dough before you can even drop ’em onto the cookie sheet…they are THAT good!

I usually don’t demand my readers to do anything, but now I am. MAKE THESE STAT!

    Ohhhhh these look amazing, I have been craving butterscotch SOOO much lately, and I used to love cookie dough as a kid! I will have to try these since I have not found a way to indulge my craving that doesn’t take a ton of time and isn’t just total junk, lol.
    My easy treat lately has been a crazy cranberry coconut cocoa concoction (wow, try saying that five times, lol!) it has sweet, tangy, a little salty, and just hits the spot for me.
    Here’s what I do:
    mix some dried cranberries with shredded coconut and toasted almonds or walnuts in a small bowl; then make a ‘sauce’ with cocoa powder, a bit of salt, stevia, and some water. mix that all up to make a thickish sauce and pour over my crazy cranberry coconut mixture. this would be awesome with some almond milk or over ice cream, but i just used what i had in my fridge and it did the job 😀

  5. i havent had butterscotch in forever but I definitely want to try these! :) Ahhhh cookie dough is really good, but I can only have it small doses. actually, slow churned cookie dough ice cream is a frequent item in our freezer 😉
