How are you?! I got back from the conference late last night and I was t.i.r.e.d. Seriously fabulous conference, and I feel so lucky to have been there!
Still on a high from teaching a fun super sweaty bootcamp, though(!!)-my hair is wet b/c of all the sweat…..:
I ate a great tasting -new-to-me bar (not necessarily the best stats, but it was what I needed at the time):

I made some delicious chickpea snacks the other day, and I just HAVE to share the recipes with you!
Chickpea Snacks
Garlic-Lime Salted Roasted Chickpeas
Ingredients
- 1/2 lb chickpeas
- 1 T salt
- 1 drop 100% pure lime essential oil (or juice of 2 limes)
- 1 T Olive oil
Directions
- place cooked (or canned) chickpeas on a baking sheet
- roast them in an oven for 35 minutes at 375 (turning every 10 minutes)
- in a mixing bowl combine the rest of ingredients
- dump the roasted chickpeas in the bowl and mix!
YUMM. These babies are good! And such a great snack too.
My husband looooovvveeed these ones.
And, a recipe for the sweet tooth:
Cocoa Cinnamon Roasted Chickpeas
Ingredients
- 1/2 lb chickpeas
- 1 T cocoa powder
- 1 T olive oil
- 1 packet Stevia
- 1/4 scoop chocolate protein powder
- 1 t salt
Directions
- place cooked (or canned) chickpeas on a baking sheet
- roast them in an oven for 35 minutes at 375 (turning every 10 minutes)
- in a mixing bowl combine the rest of ingredients
- dump the roasted chickpeas in the bowl and mix!
- Enjoy!
These are both aaaahhhhmazing!
The recipes are easy, quick, and delicious–can’t ever beat that! Oh, and you can cook your own chickpeas (boil’ em), or you can used canned.
Thankful Thursday
- I am thankful for all my new friends (and coworkers) I got to meet these past few days!
- I am grateful for my feet-and that they carried me through some major heels during the conference
- I am super thankful for an awesome workout that gets my blood pumping and the endorphins kickin’!

ummm yes!! i actually have a bag of chickpeas that i need to use/cook, so this is perfect!!

ok i need to make these stat–i’ve been meaning to roast chickpeas and keep forgetting! For these i would def use canned chickpeas but if i’m making falafel then I need to use “from scratch” chickpeas since they hold together a lot better then the canned ones.
Today I am thankful for date night with Kevin, I haven’t gotten to see him much this week and I miss him!
I know-I had been meaning to too…so I finally did! Hah

I loooove roasted chickpeas, but I’ve only ever had them savory! I really need to try the sweet ones. I can’t remember where I saw it, but someone posted a recipe for cinnamon sugar ones that sounded so good.
I can’t believe I have still never roasted chickpeas! NEED TO!

Hi Annette! I just discovered your blog this week and I adore it! So weird – I just used chickpeas yesterday to make some homemade hummus! Yummy! I’ve never had roasted chickpeas but I can’t wait to make them
P.S – After reading your blog I’ve decided to try a BodyPump class at my gym. I have low bone density (I’m only 27) because of a genetic blood disorder (thalassaemia) I have, so I’m always on the lookout for weight bearing activities. Thank you so much for the inspiration!
Thank YOU, Belinda! Enjoy the class! Make sure you go 2-3 times before you decide whether you like it or not (takes a bit of getting used to it), and do YOUR best (don’t worry about what others are lifting).
