Chocolate Almond Protein Balls

Good morning! Happy MAY :)

Thanks for all the kind comments about our wedding :) I can’t believe it was just 2 years ago?! I scored a great man, so they’ve been 2 awesome years.

We had an afternoon picnic, ate some yummy food that night after I taught Zumba, and enjoyed the few minutes we could together on a work day.

So over the weekend I sent out this on Twitter :

And OH these are GOOD!

And easy! All you need is this:

Chocolate Almond Protein Balls

Ingredients

  • 1 1/2 scoops Chocolate Whey Protein powder
  • 2 tsp cocoa powder
  • 1/4 cup oats
  • 1 handful almonds (about 20)
  • 2 packets Stevia/Truvia
  • 2 tsp vanilla
  • 1 Tb cinnamon
  • 1 tsp salt
  • dash of almond milk + to taste

Directions

  • In a food processor pulse the protein powder, cocoa powder, oats, and almonds.
  • Add in the rest of the ingredients.
  • Pulse/stir until sticky and slightly chunky. (Add in more almond milk and/or water if it won’t stick).
  • Use a spatula to scrape the sides and pulse again.
  • Roll into balls using a spoon and your hand.
  • Place on a tray and freeze for 30 minutes. Transfer to small baggies and place in the fridge.
  • Enjoy at your leisure!

Can’t beat these babies. They’re chock full of protein, healthy fats, and complex carbs–plus, if you use stevia, there is no added sugar. And these taste amazing!

I even licked the blade to get the rest of it off! (Yes, that is another crazy confession, and no I don’t advocate doing that. But I was very careful!)

(Side note: My husband even liked these. You know that’s a good sign that they’re not tooooo weird.)

But then again, they kind of look like poop blobs…..Well, I am no food blogger or photographer. But I can vouch for ’em–that even if they look like, well, crap, they are incredible.

And I am going to stop there.

  5. I’ve just this week turned to a soy/hemp/pea/cranberry protein blend rather than whey (dairy intolerance boo!) can you cook with this stuff too? Will it work for this recipe do you think?

  9. hahahah I lick the blade all the time!! Some days I am baking such amazing things that I get a little ram my with the blade…That’s when I have to tell myself to calm down and grab a spoon 😉

  11. Is there a PB version of these? I’m allergic to chocolate.

    • You could do almonds and peanuts or peanut butter. And just choose a different flavor of protein powder. Honestly you could make a totally new recipe with the idea of having something chunky (almonds), sweet (stevia), carbs (oats), and protein (powder).
