Whole Wheat Alfredo Shells With Broccoli

Good morning!

Thanks for all the congrats from Saturday’s race–I feel so lucky and blessed that my body was able to do that!

Not going to lie though, my hips and calves were quite sore the next day, and I had 1 blister. But, after lots of muscle rubs (this one is AMAZING!), ice, and foam rolling, I felt almost brand new!

Other than the fact that I believe I might have aggravated a tendon issue in my foot…. but luckily it isn’t so bad (I can walk fine, but there is a little tweak). So lots of ice and extra rest has been my friend lately. Plus, this is a good excuse to get back into the water and back on the bike.

Seriously, now that I know I can tackle the run, no problem, I need to make sure the same goes for the swim and bike for this year’s Half Ironman!


I bet you wondered what I ate the night before, huh? I mean, what do you cram into your body before a long-ish race that you never trained for?

I thought the same thing! Funny.

Well, this gem of a recipe (EASY) of 4 ingredients was it. (I had 6 ingredients, but those 2 were optional).

Whole Wheat Alfredo Shells With Broccoli


  • Whole wheat shells
  • Optional: leftover Easter pasta (we did 1/2 and 1/2 of both)
  • 1 jar Ragu Reduced Fat Alfredo Sauce
  • 1 large head of broccoli
  • wilted spinach (optional)
  • salt/pepper to taste


  • Boil water & make pasta as directed.
  • Steam broccoli.
  • Warm Alfredo sauce over stovetop.
  • Drain pasta, mix in Alfredo sauce, and add broccoli florets.
  • Season with salt/pepper to taste.
  • Dump over plate of wilted spinach to eat. (Optional on the spinach!)

Easy, delicious, and pretty healthy. Score!

I like Alfredo sauce, but only if it’s to my liking. Makes sense? Probably not, but one time I had great Alfredo, and then another time it was nasty. So yeah, it’s a touchy subject over here. Especially because I like marinara more. But change is always good, right?! 😉

But this Alfredo, this one was good.

And yes, it fueled me just fine for the next day’s impromptu half marathon if I do say so myself! 😉

  1. I don’t love alfredo sauce… before a big race I do try and eat whole wheat pasta, veggies, and a red sauce! :) Pasta is always good.

  2. I used to love restaurant alfredo as a kid – but now I dread when it’s the only vegetarian item on a menu. I do like your semi-homemade meal though!

  3. oh i LOVE alfredo sauce. i love marinara sauce too, but alfredo slightly wins between the two. i’ve only ever tried the Classico jarred alfredo sauce, so i’m interested in trying the Ragu some time!

  4. i totally feel you on alfredo sauce..i’m particular about how i like mine as well. I dont eat it too much though…i’m a bigger fan of vodka sauce…speaking of which, I always eat penne alla vodka as my dinner the night before a race…its worked well so far :)

  5. Sorry- i am NOT an alfredo fan- it’s just too thick and creamy for me. I’m a marinara girl all the way. In fact, I’ll eat marinara on pretty much anything!
    The rest of the ingredients sound good though! :)

  6. I love Alfredo and I always add broccoli to my dish when I make it! Saucy broccoli is the best part! :-)

  7. I love alfredo sauce! It reminds me of being a teenager when the only thing I knew how to cook for myself was cheese tortellini with alfredo sauce haha. 😛

  8. I am such a pasta freak and fettuccine alfredo is my absolute favorite! If you’re looking for another healthy pasta recipe, I made this healthy skillet lasagna last night and it was soo good!


  9. I use a rolling pin instead of a foam roller. :)
