Good morning!! I LOVE the weekends. Seriously–such an awesome aura of more freedom, fun, and really living. Sometimes I feel like the work week could have a little more spice to it-don’t ya think?! (Like Wednesday is a half day or something. Hah).
Anyways, how is your weekend going?!
Last night my husband and I saw “The Vow” in a dollar movie theatre–and I liked it! I definitely cried. Like 3 times. Awesome.
THEN, this happened:
Um, yah. My husband saw the TCBY sign first, and he was like, “Want to go?”
There is no question for me when it comes to it being a weekend and a good fro yo establishment is around……
I think I died and went to heaven. I am a caramel girl through and through!
And yes, it WAS just as delicious as it looks.
And yes, that smile above pretty much matches my smiles on my wedding day.
But shhhhhhhh don’t tell.
And guess what? This TCBY is really close to 2 gyms I teach for…..
That could be either a really good thing, or, well, a really AWESOME thing!
And because I know you all want to see more than that white coat all the time, here is what I wore:

Today is bound to be good as well-probably because I am already planning to have another amazing sandwich like we had last night.
I’ve said it before, but I’ll say it again : the panini press is a MUST have. It takes any dinner from semi-boring and lazy to decadent and well-thought through (well, at least it appears to be like that to those whom you serve it!)
And because I am SO done with the diet mentality and any disordered eating habits, I embrace sandwiches now (I used to ONLY ever eat salads. I am not kidding.)
However, any sandwich can be taken from semi-unhealthy to amazingly delicious and super healthy with a few easy tweaks and add ins.
Easy, Healthy Sandwich Add Ins
My favorite easy, healthy sandwich add ins are:
- spinach
- bell peppers
- tomatoes
- cucumbers
- spicy mustard
- strong cheeses (tip: when you use stronger cheese, you don’t need as much)
- onions
- garlic
- asparagus (surprisingly good!)
- sprouts
- apple slices
- carrots-slices lengthwise
And yes, most of those add ins are super high-water dense foods–so you can pile ‘em in to your heart’s delight.
So grab your panini press & some amazing whole wheat bread, and make your sandwich amped up with these easy, healthy add-ins!
And with that, I am off to teach some BodyPUMP (and prove to my boss I can do it well. Hah.) Whooo!

Haha trust me, I’ve looked into flying to Utah several times! Also looked at driving from CO Springs but it’s like 9 hours!! Haha guess Utah and CO are big states

i LOVE paninis! we use our george foreman grill to make paninis and it works great. i almost always have to have some cheese on my paninis because i love when it gets all melty. it isn’t the same without it!
i love putting avocado on my sandwiches. yummm.

I’m a sandwich freak! I usually eat one almost every day of the week haha. My standard combo is hummus, avocado, thinly sliced carrots, cucumber, tomato and sprouts. Sooo good! But when I’m feeling a little more fancy I like to do a grilled panini with turkey, brie cheese, honey mustard and apple.

ive tried so many times to “cut” bread from my diet; and boy was that stupid! it just left me craving it so bad and then eating it day in and day out ! So my new sandwich addiction is my daily egg (2 fried egg whites) on a arnolds sandwich thin w/ a slice of cheese and some sugar free grape jelly! yummm to the yum yum!
o and i actually had the greek yogurt from TCBY yesterday! delish!
