Berry Protein Smoothie + Salsa Quinoa Bowl

Oh friends!!

Life is gorgeous around here. Literally.

It is going to be around 80 degrees here (um, I live in St.Louis, not Mexico!), I am going running today, I have a fun work meeting, I get to work on some fitness shoot pictures (my sister took ’em, thank YOU, Lara!!–so get excited–I LOVE Picasa for photo editing!!), and I might be able to finish my book. And, you get TWO recipes today. TWO.

Why? Because they’re both ridiculously easy, delicious, healthy, and packed with protein. Saying goodbye to unwanted body fat is not just done in the gym, my friends–what goes on in the kitchen is just AS important.


Berry Protein Smoothie

Prep time: 5 minutes; Serves: 1. In a huge, overflowing glass (or 2 less-hungry people)


  • 2/3 cup almond milk + 1/3 cup water
  • 1/4 cup chocolate milk
  • 2 huge handfuls spinach
  • 1 scoop chocolate protein powder
  • 1.5 cup frozen mixed berries
  • 1/4 cup plain Greek yogurt
  • small handful ice
  • stevia, cinnamon, or cocoa powder to taste


  • Dump everything in a blender
  • Blend until smooth
  • Pour into a huge glass!

This is packed with protein (fats and carbs too!), delicious, and really filling. Plus, it packs in 4 servings of fruits and vegetables. No wonder I’ve been feeling amazing lately! I’ve been downing at least 4 per week!


And because I hate making lunch (exhibit A), I try to keep ’em simple, filling, nutritious, and as fast as possible. That is a hard task if you’re not used to crazy concoctions. HAH. Just kidding. This recipe is not that weird….

Salsa Quinoa Bowl

Prep time: 14 minutes; Serves: 1


  • 1/2 cup quinoa, cooked
  • 1/3 cup salsa
  • 1/4 cup plain Greek yogurt
  • 1 Tb nutritional yeast
  • handful of spinach (not pictured)


  • Cook quinoa as directed (boil it -2 parts water to 1 part quinoa-, then cover and leave on low heat for 10 minutes, then fluff with fork)
  • Layer a bowl –ummmm, or plate — with a handful of spinach (not pictured), then top it with quinoa
  • Dump nutritional yeast, then salsa, and then yogurt on top of that
  • Eat with a fork!

EASY and delicious AND nutritious. (Don’t you think I should’ve gotten a degree in recipe writing?! Man, I amaze myself. heh)

  2. i love dipping veggies… recently i made some humus and that’s great for dipping! lunch usually consists of leftovers, and if i don’t have any then i really have to make an effort! but i do because anything is better than school lunches..

  3. I make huge smoothies all the time using protein powder, fruits and spinach. I love them really thick, so I have to put them in a bowl and eat them with a spoon. Yours looks SO good!

  7. The quinoa bowl is one of my go to recipes! I almost always have leftover quinoa in the fridge, and I like to throw some in a bowl with whatever random toppings I can think of. Usually it’s salsa :) and corn!!

  8. smoothies are a great way to pack in lots of fruits and veggies, as well as big ol’ delicious salads. i also like doing an egg scramble or omelet with veggies mixed in. it is a beautiful day here as well!! i plan to take the pups on an evening walk after dinner… yay for lighter evenings!

    favorite go to lunch is either a BIG salad or turkey on whole wheath with a piece of fruit. I used to eat frozen meals all the time for lunch but ive given it up in the past year…so much better with FRESH foods!

  13. That smoothie looks awesome! I love putting spinach in mine too. My favourite way to eat veggies in a meal are stir fries – I could seriously eat them every day! 😀

    I finally got a week off of working and drove down to Pensacola, FL with my fiance last night. The weather was amazing today & I am looking forward to going on a run tomorrow… followed by a version of your delicious-looking smoothie that I want to make now! =) I have some almond milk, yogurt,spniach, chocolate, protein powder, bananas and raspberries.. I’ll try to make it work!

    That quinoa bowl looks extra amazing ! I have no quinoa here, so it may have to wait until I get home next week!
