Whole Wheat Pancakes

I have been missing my husband (as I mentioned), but I am managing to stay positive and have fun! I even slept well (I usually can’t fall asleep if he’s not around–I know #fail on my healthy living tips part with improving sleep!), so that was helpful.

I slept so well I had pancakes the next day!

(Because that makes perfect sense. Doh!)

I was SO excited to dig into them that’s all I thought about while shakin’ it in Zumba. Okay, not the ONLY thing (dramatic, much?!), but if only those ladies knew what I was mostly thinking about as we shook it and got sweaty…… Hah.

Whole Wheat Pancakes

Ingredients

  • 1.5 cup whole wheat flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1 Tb choc protein powder
  • 1/4 tsp salt
  • 1 Tb cinnamon
  • 1 cup buttermilk (or any milk –but to make buttermilk-add 2 drops lemon juice to 1 cup milk)
  • 1 cup applesauce
  • 2 eggs
  • 1.5 Tb oil
  • 1 tsp vanilla
  • 2 Tb dark brown sugar

Directions

  • In large bowl, whisk together ingredients (flour -> cinnamon).
  • In another bowl, whisk the last few ingredients (milk -> brown sugar).
  • Pour wet ingredients (2nd bowl) into dry ingredients and stir with a wooden spoon until just combined.
  • Drop pancakes by ladle-ful onto a hot griddle.
  • Flip when bubbles form on the surface!

These are soooo good. And easy and fast to make.

{2 pancakes topped with Greek yogurt + whipped cream (best combo ever) + sugar-free syrup + chia seeds + almond butter}

They don’t really taste that ‘healthy’ or ‘non-pancake-like’ (see recipe : protein breakfast patties. hah) at all. These really are super tasty (recipe adapted from my sister-in-law!) and even kiddos (her kids) and my dad like ’em (read: they are ‘normal’ tasting and can be served to others). SCORE.

Gotta love our disclaimers at the end of recipe making. So yes, if you WANT pancakes, but don’t want the sugar rush that comes with ’em, try this recipe out today (or tomorrow)!

{P.s. Go try the Greek Yogurt + whipped cream combo….SO good. I don’t even like whipped cream-but the tang and sweet is jussssttt right}

  1. those pancakes look AWESOME! i have gotta try that greek yogurt whip cream combo! lately i’ve been topping my pancakes with a “protein frosting” (protein powder, blueberries, peanut butter, water and chia seeds all stirred up) and that’s pretty darn good too! my workout today is arms and abs and cardio. yay for having more time on the weekends for breakfast + workouts!

  9. I don’t think I’ve ever had pancakes with whipped cream!!! My favorite toppers are syrup, powdered sugar, cinnamon sugar, and blueberry syrup! All favorites from my childhood, haven’t had them in probably 10 or so years! Clearly I need to find my inner child…
