Protein-Packed Mexican Lunch (Recipe)

Hey friends! Happy GroundHog Day! Pretty sure Spring is already here and all though……

Anyone try those workouts yesterday (or today)? They are fun, so let’s get our sweat on. Seriously, sweat is MY drug of choice πŸ˜‰

So, I don’t know if you know this, but I LOVE Trader Joe’s. Holy paradise. The store has delicious treats, healthy hummuses (hummus-i?), awesome cereals, mixed nuts, dark chocolate with caramel & sea salt (personal fav), and so many vegetables.

Every time I go there I find something new and delicious to try, and then I rave to my husband that this is “my new favorite.”

Can you tell that I am a drama queen and get excited over the smallest things?! Lucky man.

Anyways.

I decided that I was craving Mexican last week (what’s new?), so at TJ’s I got spicy flax seed tortilla chips (ahhhhmazing!!), organic vegetarian refried beans, and black bean dip.

holy WOW.

{even the chips are high in protein!}

Boy do I have a recipe for you. It takes like under 3 minutes to assemble too. SO freakin’ good. I ate it 3 times last week for lunch. It was THAT good.

This lunch is sponsored mostly by TJ’s (HAH I wish!!), but could be found in other stores I am sure.

Protein Packed Mexican Lunch

Ingredients

  • 1/4 cup black bean dip
  • 1/3 can refried beans (mine were vegetarian–NO lard. wahoo)
  • 2 tsp salsa
  • 1 tsp taco seasoning
  • 1 large dollop Greek yogurt
  • flax seed tortilla chips
  • bag of carrots

Directions

  • cook refried beans and bean dip in a microwave or over a stove until heated
  • throw in the salsa and seasoning
  • dump into a bowl and top with that large dollop of Greek yogurt
  • dip your spicy (flax seed) tortilla chips in
  • eat carrots on the side (straight out of the bag for me–classy)

I want you all to GUESS how many grams of protein were in that lunch….. (hint: look close at pics….)

I was full for hours! And it is so satisfying.

    i had a protein packed snack of cottage cheese and grapes yesterday :) but i love this idea and im a sucker for chips, refried beans and greek yogurt (so good in replacement of SC, love it!)

    Today I am thankful for water (i’m chugging it like a monster lately) and i’m thankful for the joy running has brought me into my life (i just signed up for my first marathon, im sooo excited)

    • Oh that sounds interesting–the cottage cheese thing, but yumm!

      I LOVE these chips, you’ve gotta try ’em-make the 30 min drive. DO it :)

  4. Oooh this lunch looks good! I can tell that it would be really filling too! (Something about mexican dishes- even healthy- always fill me up!).
    I’m a big fan of Trader Joes too. The closest one is 30 miles from me and I don’t know if that’s a blessing or a curse (as in, if it was closer, I’d be there every day).

    My protein packed lunch was a salad with tons of garbanzo beans, honey glazed tofu and black beans – with dried fruit, feta and balsamic! Yum!

  6. YUM! kind of reminds me of the “healthified nachos” i made for dinner last week, which i LOVED! i’m a huge fan of mexican – it’s my favorite ethnic cuisine for sure. refried beans i could a ton of…especially with chips and salsa.

    today i am thankful that i got a GREAT night of sleep the last couple nights. i’ve been having a hard time sleeping lately, so it felt glorious to sleep well.

    This looks delicious and I would totally make it but retried beans (and carrots) really upset my stomach. Which is really depressing because I love both :(

    I’m guessing 16g of protein depending on the size of the Greek yogurt dollop!

    • I’m sorry about missing out on the refried beans :)

      But good guess! It is actually 32 grams of protein for my size of lunch :) Wahoo!

  12. I looooove those chips and spicy bean dip from TJ’s!!! I went there tonight and came back with new stuff like always! Tonight’s new-to-me product was wasabi seaweed crisps or something like that.. Have no clue what they will be like besides the wasabi part!!
