Texas Sheet Cake

Oh hey friends! After all that talk about getting fitter by lifting weights, lets talk cake shall we?? :)

So I don’t love cake. I see cake as a vehicle to eating more ice cream yes, but by itself, most cake does nothing for me.

However, with that being said, this does not mean I won’t eat cake at all. Nope. I will eat have the cake and eat it too (who coined that phrase?! It makes no sense!), but only if it passes my taste test.

This taste test has been honed to become one of the best in the world……

It involves me eating a small bite off my husband’s plate and then deciding if it is deemed worthy for me to go and get a slice.

Such a marketable taste test if I do say so myself 😉

Anyways. Back to cake.

In high school a lady from my church made some cake and brought it to a church function. I ate a bite (probably stolen from a sister or friend), grabbed my own slice, and then proceeded to eat 2 more slices. I kid you not. (Besides, I was a dancer and athlete, and it was during high school, so I could eat anything, right?!)

This cake was Texas Sheet Cake. And I found my match. It was mostly icing mind you, and the cake part was shorter…so I guess it’s mostly icing I like if it’s GOOD icing.

Well, long story short, this recipe came from that lady who made me like SOME cakes.

And yep, this was the cake we made (and ate) this past weekend for my sister’s birthday. For sure do I eat really sugary foods once in awhile on special occasions–gotta balance all that fitness out, right?! 😉

And yes, Julie, my sister is a Belieber. 1000x through.

Texas Sheet Cake

Ingredients

  • 1 cup butter
  • 1 cup water
  • 4 tablespoons Hershey’s cocoa
  • 2 teaspoons vanilla
  • 1 teaspoon cinnamon
  • 2 cups flour
  • 2 cups sugar
  • 1 teaspoon salt
  • 2 eggs
  • 1/2 cup sour cream
  • 1 teaspoon baking soda

Frosting

  • 1 cup butter
  • 4 Tablespoons cocoa
  • 6 Tablespoons milk
  • 2 teaspoons vanilla
  • 5 cups powdered sugar
 Directions
  • In a saucepan melt 1 cup butter.
  • Add water, cocoa and vanilla. Cook until gentle boil. Set aside.
  • In a bowl mix flour, sugar and salt.
  • Pour chocolate mixture into dry ingredients and mix, not too much.
  • Beat 2 eggs and add when mixture is cool.
  • In another bowl mix sour cream and baking soda and let sit until foamy.
  • Add to cake mixture with spatula until just blended.
  • Grease jelly roll pan and bake at 350 for 20 minutes.
  • Add frosting as soon as cake is finished.
  • For frosting: In a saucepan, melt butter, milk, cocoa. Bring to a boil and turn off. Add vanilla and powdered sugar.
It’s easy-although there are a few steps involved. BUT this is a definite crowd pleaser!

By the way, my older sister once made this cake using only Greek yogurt (in place of the sour cream) and I made it doing half yogurt, half sour cream this time around –both were awesome. So take your pick!

  1. Oh yum that looks awesome! I’m like you- I love the icing on cake :)…but it better be good icing haha. I enjoy some of Justin Bieber’s music, but I don’t know if that makes me a belieber haha

  2. i’m the same exact way with cake… usually it doesn’t do much for me. i AM a huge fan of quality icing though! 😉 when i saw the title of this post, it immediately intrigued me because JUST yesterday my client was telling me about this texas sheet cake she had over the weekend that was amazing, and i had no idea what it was even after she tried to explain it to me. looks delicious to me! 😉

    • Yep–the hus can have the cake, I’ll take the icicing (if it’s good)–and eat it on ice cream. YUMM.

      It is REALLY good-it’s the icing that makes it good though. Maybe I should just make a pot of icing and just eat that?! HAH. I make myself laugh……

  3. im not a justin bieber fan but this cake gave me a nice giggle this morning! so cute!

    i’m kind of the same way about cake too..i’m not really a huge fan unless its ice cream cake 😉 i guess im more a fan of pies and cookies and bars then cake. i will also typically just share a piece with someone or have a few bites off kevs plate :)

  4. Your sister’s reaction is PRICELESS! The cake is adorable, and it making me hungry. I’m not a huge cake fan either, I usually give the cake part to Husband and keep all the icing for myself!

    • Yes, she’s a cutie for sure :)

      We’re the same—the hus gets the cake and I get all the icing. He’s so luck to have me. Haha

  7. I have never heard that term before to describe a Justin Bieber fan- but YES. I LOVE THE BIEBS!
    I play his music in spin class sometimes… people LOVE IT. Seriously.

  10. I don’t do cake, I do pie. Here in Texas we call that cake, “Better than S-x” cake. :)
