Protein Breakfast Patties

Hey friends!

Thanks for all the well wishes and comments about BodyPUMP! I love to step outside my comfort zone–so more to come in that arena, I am sure :)

So funny story….I slept in on Sunday (wahoo!!) because church wasn’t until later, and when I work up I was starVING (so hungry, you see, that part of it had to be in all caps for emphasis). BUT I wanted to make pancakes (thanks to Julie’s post!). But needed food. Asap.

{This is what I look like when I wake up. Minus the eye makeup. No shower. Lazy Sunday, much?! You’re welcome.}

So I ate an orange and pulled out ingredients to make my very first batch of protein pancakes –from scratch, and from my head.

Let’s just say my husband ate 5 of them and said “these are NOT pancakes.” I am laughing as I type this at that awesome memory……

I am sure many of you healthy eaters who are married, have a boyfriend, etc., know JUST how much our spouse/sig other love us, enough to eat our foods/recipes we come up with.

Some of the meals/recipes are totally legit and delicious and almost tastes like the real thing. And some of those recipes just do NOT resemble anything of the ‘original’ idea.

These “pancakes” are such. (I even toyed with the idea of not posting the recipe because of that…..but then decided to change the name of the recipe. Win-win).

Here are some of the stats of these alleged “pancakes”:

Delicious: CHECK (disclaimer : delicious to me)

Healthy: CHECK x 1000

Filling: oh YES

Protein packed: CHECK

Whole wheat: CHECK

Easy to make: CHECK

Resemble a pancake: um…..well, NO

But that doesn’t stop me from eating them! These protein breakfast patties are actually the perfect post workout snack –make a batch, freeze ’em, and then reheat right after a tough workout (like BodyPUMP release 80!!) 😉

Go on and laugh at the photos, but boy did they make a nice filling breakfast to hold me over during church (3 hours).

And yes, my husband did like them, he would just prefer if they be called health patties or something like that because they were “NOT pancakes.” True story.

hehe.

{in my defense, my sister once fed her husband black bean brownies without telling him what was in them…..}

Protein Breakfast Patties

Prep time: 5 minutes Cook time (For all of ’em): 20 mins Makes: A butt load lot

Ingredients

  • 2 cups whole wheat flour
  • 1.5 cup almond milk
  • .5 cup chocolate milk <—-secret ingredient 😉
  • .75 cup Greek yogurt
  • 3 Tb cinnamon
  • 1 Tb sea salt
  • 1 egg
  • 1 tsp baking powder
  • 1 Tb chia seeds
  • 1/3 cup water if you want more “runny” batter

Directions

  • Mix ingredients in a bowl.
  • Pour over a heated skillet or pan
  • Flip when bubbles form
  • Eat warm with favorite toppings (!!)

There you have it. I do sometimes eat “normal” pancakes, but I also like to be creative AND I like to eat pancakes that actually fill me up without having to eat 20.

  2. so funny! i made pancakes yesterday, too, because of julie’s post! and hilarious about black bean brownies… once, i attempted those and made jonny eat them… still to this day he talks about how i am 99% for delicious dishes… and he ALWAYS has to bring those up! people are always like uhhh why would you put black beans in brownies?? i just need the right recipe!

      I know–my sis always gets crap about it, it’s funny though! Now it’s a big family joke-haha

    i really really enjoyed the whole wheat pumpkin pancakes that i made back in november…i really do love experimenting with my whole wheat flour. i love the texture it tends to give things!

They are soooooo good and look and taste like pancake consistency. Plus, if you reheat in the microwave your house/office will smell like pumpkin pie. Yum!!

    Sara’s Pumpkin Protein Pancake
    Serves 1.

    ¼ cup oats
    ¼ cup pumpkin puree
    1 scoop protein powder (vanilla works well)
    1 egg white
    ¼ tsp cinnamon
    1/8 tsp nutmeg
    2-4 tbsp water

    Mix first 6 ingredients in bowl. Add water 1 tbsp at a time so batter becomes mixed, but not too running. Spray and heat pan on medium to high heat. Pour in batter. Flip pancake when small bubbles start to appear or when bottom of pancake is nice and golden brown. Cook other side until golden brown as well. Splash a little sugar-free syrup and enjoy!

  8. haha i can relate all too well when you talked about our husbands/signif. others that have to deal with our crazy healthy food concoctions… let’s just say my husband is a good sport. 😉 the recipe looks yummy and i love nutritional stats on them! i’m all about high protein, high fiber pancakes to keep me filled up and satisfied. sometimes the good ol’ buttermilk pancakes are a must for an occasional indulgence though. 😉

    • HAHA :) yes our hubbies should be friends and talk about our weird concoctions 😉

      And yes, I like a buttermilk pancake/waffle once in awhile too-gotta have the real thing too in life!

    I just eaten dinner and all of a sudden I am craving pancakes that aren’t pancakes. And black beans? In BROWNIES?! She must have been crazy. (and they were not that bad.)

  11. The “patty” seems thicker and fluffier, looks better than regular looking pancake! Love your simple recipe! 😉
