Easy Butternut Squash Soup

Hey friends! I am glad we are all in agreement that lifting heavy (or even lifting at all) is KEY to getting and staying fit, strong, and healthy. If that is not a kick to the butt, then I don’t know what is!

So this weekend I was totally playing around with a delicious ingredient (another type of squash) : butternut squash, and it turned out awesome! Totally blogworthy :)

And it is EASY. I used to think soup was incredibly hard to make (yes, just like I thought granola was. HAH.)

Apparently I need to stop being scared to do or make things 😉

Easy Butternut Squash Soup


  • 1 butternut squash (baked)

  • 1 large onion
  • 2 cloves of garlic
  • 2 tsp salt, 1 Tb paprika, 1 Tb cinnamon
  • 2 cups water
  • 1 cup milk (or almond milk)
  • Greek yogurt to taste -and for topping


  • Bake the butternut squash soup in the oven -35 mins at 350
  • Cook the onions and 1 cup water on the stove top until soft
  • Add in the garlic & spices
  • Scoop out the flesh of the squash and add to the pot -cook for 5 minutes
  • Add in the water and milk
  • Cook for 2 more minutes
  • Immerse the immersion blender to get the chunks out (or pour into a blender to smooth out)
  • Add salt to taste, as well as Greek yogurt for added creaminess

This is a super easy, delicious, healthy, veggie-packed, piping hot, filling, and tasty soup (how’s that for adjectives?!)

Don’t be afraid like I was to make soups. This is insanely easy (and it is totally cool to mix and match ingredients), so go grab a squash, a pot, and roll up those sleeves. Fall is here, so let’s have some hearty Fall soups!

  1. I always love a hearty bowl of chili. Minestrone soup is another favorite of mine! This butternut squash soup looks great too! I used to be scared of making soups too, but I’ve now realized that they’re one of the easiest things to cook!

    My favorite kind of squash is a toss up between spaghetti squash and butternut squash. I can’t decide!!!

    • Oh yes, minestrone is a good one! You and I think alike–spaghetti and butternut are great. But I really LOVE acorn squash. mmmmm :)

  3. its so funny, i had a can of butternut squash soup in my desk and i was debating eating it…but now seeing this recipe has inspired me to make my own!

    soups are doubly awesome because you can freeze them for eating later on. so convenient and awesome during the winter :)
