Easy Butternut Squash Soup

Hey friends! I am glad we are all in agreement that lifting heavy (or even lifting at all) is KEY to getting and staying fit, strong, and healthy. If that is not a kick to the butt, then I don’t know what is!

So this weekend I was totally playing around with a delicious ingredient (another type of squash) : butternut squash, and it turned out awesome! Totally blogworthy :)

And it is EASY. I used to think soup was incredibly hard to make (yes, just like I thought granola was. HAH.)

using black and white to cover up the horrible lighting. hah --this is the onions/garlic/water

This is a super easy, delicious, healthy, veggie-packed, piping hot, filling, and tasty soup (how’s that for adjectives?!)

Don’t be afraid like I was to make soups. This is insanely easy (and it is totally cool to mix and match ingredients), so go grab a squash, a pot, and roll up those sleeves. Fall is here, so let’s have some hearty Fall soups!

so easy.

I am off to a very busy day….but I’ve got a date with the treadmill first, though 😉

Have a fantastic day!

What kind of soup do YOU love to eat on a cold, Fall evening?? What is YOUR favorite kind of squash??

My favorite kind of squash is a toss up between spaghetti squash and butternut squash. I can’t decide!!!
