Waffle Recipe – Pumpkin Edition

So that was fun yesterday….NOT. With the site being down half the day (working on some stuff and made a booboo), here is the link for yesterday’s DO What You Love post. Why hello there Fall.

Glad you came by, and SO glad you brought pumpkin with you. Guys, I am seriously addicted to this orange gooey goodness.

I even went so far as using it to tweak a simple waffle recipe…..with the base being Krusteaz waffle mix!

get ready for an easy recipe!

Oh, but BOY did I tweak, change, and alter it :)

Waffle Recipe — Pumpkin (Krusteaz) Edition

{So I *borrowed* the beginnings of the recipe from a bag….a Krusteaz bag. But I then added/took away stuff and made a seriously good waffle recipe!}



  • 2.25 cups Krusteaz pancake mix
  • 1.5 cup cold water
  • .33 cup pumpkin
  • .25 cup applesauce
  • 1 tsp olive oil
  • .25 cup almond milk
  • 2 Tb cinnamon
  • 1 Tb nutmeg
  • 1 Tb vanilla
  • 2 Tb ground flax seed<—hello healthy fats!
  • 1 scoop chocolate protein powder


  • Dump all ingredients into a bowl and mix. <—-clearly my word usage explains I am a pro at baking/cooking 😉
  • Warm up waffle iron.
  • Spray waffle iron with PAM spray before dropping a large dollop in the center of the iron.
  • Press down and spin. Wait patiently for the final product…..
  • Top with *stuff* of your choice and EAT!

they are so fluffy!

Seriously, this is an EASY waffle recipe with delicious pumpkin. Although it is not whole wheat/grain, pretty sure the pumpkin and flax seed and protein powder make it *last* in the stomach a little longer than a normal ‘white’ belgian waffle……I was full WAY longer than I would’ve been if all that *stuff* hadn’t been in there 😉

P.s. I doubled the recipe (I ate it with 6 people and the recipe made just enough for everyone) and froze the rest to eat later……wheeeeeee!
