Chicken Enchilada Recipe + Thankful Thursday

As you might know by now, I am not a cook, chef, food blogger, or lover of cooking. I do like spending time in the kitchen when I can, I like making my own recipes up, I loathe following recipes to a tee (who uses a knife to knock off the flour so it is not over the top of the cup…..NOT me!), and I really can not stand very complex recipes.

Call me lazy. Call me boring. Call me crazy.

Chicken Enchilada Recipe

But I am none of those (<—at least I hope not!) I really just like simple, healthy, and somewhat quick when it comes to meal making. Is that so much to ask?! I think not πŸ˜‰

Enter in Mexican food. It is usually super unhealthy : loaded with tons of cheese, sour cream, meats, oils, lard, and fried. There are some redeeming qualities like salsa, limes, avocado <—even though me no likey, and lettuce, so all is not lost.

Oh and did I mention that I love Mexican as does my husband?

Now do you see the dilemma?

Thankfully my recent adventure in the kitchen proved to alleviate all of these problems. And my husband and I were happy campers eaters :)

Chicken Enchilada Recipe


  • whole wheat tortillas (1-2 for each person)
  • 5 chicken breasts
  • Greek yogurt
  • 2 cans black beans <—hello fiber!
  • salsa
  • ground Cumin
  • cheese
  • enchilada sauce

mix it up in the bowl!


  • Cook chicken in crock pot (HIGH for 4 hours, cooked in salsa and water)
  • Shred chicken in a bowl
  • Add Greek yogurt (about 1/2 cup)
  • Add salsa (1 cup)
  • Add about 1 cup enchilada sauce
  • Add drained black beans
  • Add 1 Tb cumin
  • Sprinkle cheese in
  • Mix all of the above ingredients together
  • Drop about 1/4 cup of the mixture into each tortilla and roll up lengthwise, tucking edges under
  • Place stuffed tortillas into a 9×13 pan
  • Top tortillas with about 1 cup enchilada sauce and sprinkle more cheese
  • Stick in preheated oven set at 375 degrees, for 35 minutes
  • Eat topped with Greek yogurt, salsa, and shredded lettuce

Pretty sure no meal can top this chicken enchilada recipe….in terms of spicy Mexican taste, delicious healthy ingredients, and easy cooking/prepping. Not sayin’ my {easy peasy!} recipe is above anyone else’s. Promise!

*Note : Vegetarians can substitute tofu for the chicken, or omit altogether and add more beans/corn/lentils.

  1. i DEFINITELY have to try these!! i love mexican and i love my crockpot so this is right up my ally! i usually stick chicken in the crockpot and then shred it when it’s done and add bbq sauce, so i’m excited for a new recipe with the same easy peasy thang! keep the recipes comin, girl! πŸ˜‰

  6. YUM!! I love mexican food, but I’m bias because my hubby is mexican :) I try to make some real deal stuff, but I like the simple easy to make recipes too! I love making my chipotle style rice with this… cook long grain white rice add fresh cilantro, salt, and lime..boom! YUM!

  7. Yum! This looks great. I tend to make Mexican food one night per week and sometimes it’s tough to find something different. This will definitely be added to the rotation!

  8. this recipe looks GREAT! I am seriously the opposite in that I love working by recipes…maybe its that I dont trust myself enough to whip up recipes on my own, but I like having the step by step instructions…my dad and brother are the ones in the family that are amazing cooks in that they make up their own recipes and make stuff from scratch..i need to learn from them :)

    I LURVE mexican food though…you need to try salvadorean food too, so good, i promise (im not saying that just bc im pupusas will change your life) I actually have been meaning to use greek yofurt in exchange for sour cream. thanks for the droolworthy recipe!
