Vegetarian Spaghetti

My Labor Day was rockin’–how was yours?

One of my favorite pictures from this past week of vacation:

Trying to get several kids to pose for a picture (and hold still) is pretty much impossible.

But getting the two of us to do so? –Is actually harder than it may look since my husband loooovvveeesss pictures so much.

Vegetarian Spaghetti

While on vacation in Colorado we each had a day where we got to cook the three meals. For the dinner meal we chose spaghetti….but I surprised them all and made it vegetarian-with absolutely no meat at all (duh!)

And they all loved it and raved about it.

I personally think that everyone should have at least 1 or 2 totally vegetarian meals per week–it feels SO good to have all those vegetables in one meal!

Ingredients

  • spaghetti noodles (wish we had had whole wheat….)
  • pasta sauce (we used Ragu)
  • onions, garlic, zucchini, squash, eggplant, green peppers
  • red kidney beans <—-for protein
  • Grueyere Swiss cheese

Directions

  1. Boil water in a pot (to cook pasta).
  2. Chop up veggies.
  3. Cook onions and garlic in a skillet until translucent (over medium heat).
  4. Add chopped zucchini, squash, eggplant, peppers.
  5. Add pasta to boiled water.
  6. After letting those veggies cook for about 5 minutes, add kidney beans.
  7. Add sauce to skillet.
  8. Finish cooking pasta and drain–top pasta with a sprinkle of Grueyere.
  9. EAT (with a side salad and garlic bread)!

Meat eaters will LOVE this meal because it is satisfying, filling, and delicious.

And you’ll love it as a cook because it is quick, simple, and nutritious!

  1. i LOVE making meals vegetarian! we try and do 1-2 a week and jonny is always pleasantly surprised at how full he is able to get without meat! almost always, i use beans as a form of protein in veg. meals. i love combining sweet potato, pinto beans, and spinach in a whole wheat tortilla and topping it with verde sauce and sticking it in the oven… SOOOO GOOD! jonny does NOT love taking pictures though he is getting much better ever since he joined the fam… cuz u know how my fam is…. :) haha

    • That is a good idea for a quick lunch/meal! Plus sweet potatoes are AMAZINGly delicious!

      My fam likes to take pics….well half of ’em. Hah 😉 I guess it is a man thing to hate it??
