Carmelita Dessert

Hey, hey. By the name of this post I bet you have a pretty good idea of what is coming….CARAMEL!

As you know I am the caramel queen and this recipe is bound to blow your mind. It combines the amazing texture of oats, the bitter taste of dark chocolate, and the sweetness of caramel into a smashing success.

Indulgences and dessert anyone? :)

Oatmeal Carmelitas

for the crust:

  • 2 cup flour (I use half whole wheat sometimes)
  • 2 cup oats
  • 1.5 cup brown sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup butter, softened

Heat oven to 350 and grease the 9×13 pan. Combine the crust ingredients until crumply, and then press HALF of the crumb mixture into the pan (reserving the rest for the topping). Bake for 10 minutes.

for the filling:

  • 2 cup semi-sweet chocolate chips (milk chocolate makes it really sweet if you want it that way)
  • 12 oz. jar of caramel!!
  • 3 Tb. flour

Sprinkle warm base/crust with chocolate chips. Combine carmel topping with the 3 Tb. of flour, and then pour evenly over chocolate chips. Top it with the remaining crust mixture. Return to oven and bake 18-22 minutes.

Cool completely and cut into bars.

Then be REALLY awesome and add ice cream to the side of your bowl 😉

In all seriousness, this dessert was amazing, delicious, and tasted perfect. However, I could only eat 1.5 pieces (intuitively eating-woot!). Several years ago I would have had a bite or so (and hated myself for it), and then a few years ago I would have eaten 4 pieces and felt horrible about myself afterward.

Now: I ate it, loved it, and didn’t think a bad thought after. Healing, change, and moving forward CAN happen and IS possible. Life does not need to revolve around food, how much we weigh, or even any guilt because of great food.

Embrace the day today, you’ll be happier and friendlier because of it!!

(I just did, and did some sweeeaaattyy HIIT cardio on the treadmill. 3 miles worth of crazy fast sprints. Love! Ready to spread the love and happiness!)
