Mango Muffins + Thankful Thursday

Hey all, what a beautiful day! It is Summer, and the Summer Series is in full swing, so I have a beautiful, summery recipe to share with you :)

First of all, I love mangoes! Like a lot. They are full of Vitamins A, C, B6, and dietary fiber, which in turn help our eyes, immune system, skin, cell functions, and GI tract happenings to stay healthy and well.  A totally jammed pack fruit if you ask me!

You can even add them to salads (which makes them that much better in my book)!

Mangoes are lacking however, in the areas of protein and healthy fats, so I decided to make up a recipe that filled in those nutritional holes. Check out a similar recipe, called Whole Wheat High Protein Flax Banana Bread that I created!)

Mango Peach {High Protein, Whole Wheat} Flax Muffins

holy YUMM!


  • 1.5 cup whole wheat flour
  • 1/2 cup sugar, 1/4 cup honey
  • 1 tsp salt
  • 2 tsp baking soda
  • 2 tsp cinnamon <—-or more! I <3 cinnamon.
  • 1 scoop chocolate protein powder
  • 1/4 cup ground flax seed

  • 1 cup applesauce
  • 1 egg
  • 1/4 cup almond milk
  • 1 mango, 1 peach (chopped)
  • 2 tsp vanilla

Preheat oven to 350 degrees. Combine dry ingredients in a bowl, and mix together. Chop fruits.


Add in wet ingredients to dry, and then add the chopped fruit. Mix (but do not overmix).

Pour into muffin tins. Bake for 23 minutes (at 350 degrees).

P.s. if you check out the ingredients, you will see that these muffins are extremely healthy….in fact, when my husband took a bite he said, “they taste good….they are definitely healthy, huh?” HaH. Yeah, but they are tas-TY!

I guess if you do not want an overly-sweet treat, but still want something to satisfy a craving, sweet tooth, or to get in some extra nutrients in the form of a delicious whole wheat carb, this recipe is YOURS for the taking :) Just like those banana protein muffins are!

Thankful Thursday

  1. I am grateful for the small things in life : like my sister’s dog that continually follows me around the house. She kinda makes me feel extra special! (and I am not necessarily a ‘dog person.’)
  2. I am thankful for new(er) Zumba clothes. I definitely love Zumba itself, but I really love Zumba clothes!
  3. I am grateful for new kicks<—hello new shoes!

P.s. WHO got their weight train ON yesterday or today?? I wanna hear ya!

  2. Those muffins look delish! My problem is I make a batch of something and they end up in the freezer forever because I have a problem eating the same thing everyday.
    I am thankful this Thursday that my puppy is okay. He went in on Monday and they found a parasite in his stomach, he was at the vet for the past two days, now he is home and happy!
