Watermelon Salad

Happy weekend people! How has it been going so far?

It has been lovely, as we ate Friday night pizza, slept over with some friends, finished a fun book, and then went to a Saturday Zumba class with a friend (our husbands babysat their kids).

I SO enjoy dancing. It is also really fun to have a different instructor and try out various styles, dances, and choreography. I have ‘my’ own certain style, and it is NOT for the weary at heart 😉 I am kinda intense….so when it comes to Zumba classes, I want them hot, sweaty, sexy, and fun (burnin’ those Zumba calories!)

The class delivered most of that (I need a BIT higher intensity going on), but most of all, there was some great booty shakin’ going on there :)

So, I have a cool, fast salad recipe to share with you all. If you love fruit, greens, and nuts, you are going to LOVE this.

crazy awesome salad

Watermelon Salad

It goes like this:

  1. Shred lettuce/add spinach to a large plate <—-can NEVER have too many veggies!
  2. Slice watermelon pieces, cut some small cheese cubes, grab a bag of cranberries, and stick your hand into the nut jar
  3. Top lettuce with watermelon, cheese cubes, dried cranberries, and nuts.
  4. Add nutritional yeast to top it off with some sweet, Panera poppyseed dressing.
  5. ENJOY!

so random, but OH so good

High in veggies, fruits, protein (cheese/nuts), and tons of vitamins, minerals, antioxidants, and flavor!

If you have never had watermelon on a salad, it is a MUST. It adds a nice sweetness to the whole plate.  This salad would be perfect to bring to a barbeque, party, or dinner…..just add the watermelon right before serving.

Have a HAPPY weekend<—-I will be off celebrating with my sweetheart!

with his birthday cake last year on his birthday....recognize it, sorta?!

What crazy things have YOU added to salads recently? Did YOU know it is my husband’s birthday tomorrow?!!! :)

Watermelon in a salad sounds strange but I am willing to try it.

I love adding apples to my salads and using poppyseed dressing…haven’t tried watermelon yet–but sounds like I should!
