Happy weekend people! How has it been going so far?
I SO enjoy dancing. It is also really fun to have a different instructor and try out various styles, dances, and choreography. I have ‘my’ own certain style, and it is NOT for the weary at heart I am kinda intense….so when it comes to Zumba classes, I want them hot, sweaty, sexy, and fun (burnin’ those Zumba calories!)
The class delivered most of that (I need a BIT higher intensity going on), but most of all, there was some great booty shakin’ going on there
It goes like this:
- Shred lettuce/add spinach to a large plate <—-can NEVER have too many veggies!
- Slice watermelon pieces, cut some small cheese cubes, grab a bag of cranberries, and stick your hand into the nut jar
- Top lettuce with watermelon, cheese cubes, dried cranberries, and nuts.
- Add nutritional yeast to top it off with some sweet, Panera poppyseed dressing.
High in veggies, fruits, protein (cheese/nuts), and tons of vitamins, minerals, antioxidants, and flavor!
If you have never had watermelon on a salad, it is a MUST. It adds a nice sweetness to the whole plate. This salad would be perfect to bring to a barbeque, party, or dinner…..just add the watermelon right before serving.
