Round It Out

Hey! Hope your day is going fabulous, because mine sure is! I love the sunny weather (finally), the amazing classes I took today, and the delicious meal I just ate.

A.M. Workout:

Ran some errands, and after showering, I was sooo hungry.

So I threw something REalllY fast together <—I seriously just wanted to stuff anything into my mouth, but I patiently waited the 1.5 minutes for this thang to come together….

Holy amazing egg sandwich. The egg was slightly drippy, the pepper added the perfect spice, and the cheese melted perfectly into the bagel. Go. make. this. NOW. (sooo easy, so no excuses 😉 )

all you need is:

  • bagel thin (I used ‘everything’ bagel thin)
  • laughing cow cheese
  • spinach
  • 1 egg
  • spices (I used black pepper and red pepper)

Last night’s dinner was equally amazing….super random though.

As you’ve probably noticed, things are getting a tad crazy around here, but I always make sure I get some great exercise in. It is my SANITY. Some people do not need a scheduled exercise plan, but I LOVE it. I thrive on it.

So my yoga + Zumba workout today was perfect. I love how yoga rounds out all other forms of exercise so perfectly. Why did I ever hate on it before? <—sounds familiar to the spin class phenomena, eh?? It feels good to hit it all : cardio, weights, stretching.

I guess I need to just let go a little, live a little, and forget about what I ‘used’ to like or not like.

Same goes with rounding out a meal. Sometimes you just have to add a little sweetness at the end sometimes….well, at least I do! <—-eaten an hour or so after dinner last night

for this quinoa special:

  • cooked quinoa
  • frozen fruit, defrosted (I had strawbs, mango, pineapple)
  • almonds
  • butterscotch chips + toffee pieces for garnish
  • Greek yogurt on top

This was the perfect amount of sweetness and decadence. It was really good. I am known (in my family) for making up some crazy concoctions….sometimes they don’t always work out, but this one did.

Variety is the spice of life, my friends!

  1. Your food looks good. I buy Laughing Cow cheese but have never tried to be creative with it. Maybe I should.

  2. Yoga is definitely a rounding off workout…Zumba and pilates are that for me actually…I run and do my aerobics/strength training from Sunday to Thursday and then finish off with Zumba on thursday night and a pliates DVD on Friday…It’s perfect!!

    I don’t think I’ve come up with anything recently…I’m just a big old copycat…

    PS your quinoa treat looks phenomenal!

  3. That concoction looks really good! I like to do the samething. My son always laughs at the crazy things I come up with.
