A Wanted Gift

Hey friends! Happy Monday! It is going to be a great week, no? Me thinks so :) Maybe because my family is coming into town to ski this week….but just maybe πŸ˜‰

Also, how could the week NOT go well with a start like this:

whole wheat belgian waffles!!!

I love waffles. And french toast. And pancakes. But I really love Belgian Waffles :)

You see, we got married and my husband’s uncle gave us a belgian waffle machine….expensive, yes. Needed? Not so much. Wanted? OH YES!!! So we kept it and did not return it. This morning after my workout (40 min stairs, 30 mins elliptical, 10 mins abs/squats) I was SO happy we did not return it. You see it was a “want” not a “need” a few months ago, but today, it totally became both a want AND a need :)


I topped it with Almond Butter, homemade syrup, strawberries, and extra cinnamon. I made the batter myself following this recipe and replacing tons of ingredients (soy milk, whole wheat flour, protein powder, to name a few!!)….so basically I made it up myself :) Do I follow recipes? Not really. But I sure get great ideas from them!

The syrup : 1/8 cup butter + 1/3 cup brown sugar + 1/3 cup Karo syrup + cinnamon + 1/2 cup lite soy milk. (My husband enjoyed this too!)

clearly I dominated this meal :)

  1. The waffle looks SO good! One thing I really wanted but didn’t need was a rice cooker. We too got ours from our wedding and I LOVE it now. It cooks rice perfectly every time! We have now become rice addicts :) Plus…it cooks a mean quinoa

  2. I made pancakes yesterday and they were not nearly as amazing as these! yumsters!
